HIS AND HERS BREAD PUDDING

Prepare yourself to be obsessed with this impressive flavourful, moist Brown Bread Pudding smothered in heavenly creamy custard, bursting with the fragrant spices of cardomom, nutmeg and cinnamon. This Brown Bread Pudding is constructed of sandwiches patted with butter and fig jam which makes a delectable crowd-pleasing alternative dessert for Sundays or simply a comforting, ‘just because’ dessert that melts in your mouth and fills your being with happiness, any day or night of the week. It tastes decadent with the sprinkle of Demerara sugar which makes it ideal for adding crunchy texture in the bread pudding adding a flavour so unique and rich that elevates the taste. You’re welcome! This is my version of Nigella Lawson’s brown bread pudding.

I wasn’t sure I loved bread pudding. I had long harboured the misconception that bread pudding was just soggy bread. I was so wrong. This nostalgic blast from the past has caused my eyes to roll back in my head with pure delight.
Note: Allow your sandwiches to soak with the egg mixture for at least ten minutes before baking. Dollop with butter and Demerara sugar before it hits the oven. This step ensures a moist flavourful bread pudding.

HIS AND HERS BREAD PUDDING

Ingredients
  

  • 4 slices brown bread
  • 2 large eggs
  • 8 tbsp milk
  • 4 tbsp fresh cream
  • 2 tbsp sugar
  • ¼ tsp cinnamon
  • ¼ tsp cardomom
  • ¼ tsp nutmeg
  • butter
  • fig jam or any jam of your choice
  • Demerara sugar
  • homemade custard

Instructions
 

  • Preheat the oven to 180 degree celcius
  • Spray two 250ml coffee mugs (or small ramekins) lightly with cooking spray
  • Spread butter and jam onto the bread and sandwich. Cut into 2.5 cm pieces
  • In a small bowl, whisk together the eggs, milk, cream, sugar and spices
  • Add the bread to the bowl with the eggs and milk. Stir very well to combine
  • Divide the mixture between the mugs.
  • Sprinkle Demerara sugar over the top
  • Place the mugs on a small baking sheet, and bake for 25 minutes. The mixture will puff up and rise when you remove it from the oven.
  • Cool slightly. Pour over homemade custard.
  • Serve wrapped in a towel because the mugs are quite warm
