CHEESY TOMATO & SWEET PEPPERDEW PIZZA
Can’t let our fasting month slip up without this cheesy tomato pizza showing up. Fluffy stone ground flour thick pizza base using @eurekamills easy home mix for a toothsome, crispy bite embracing the most appetizing and delectable marinara sauce I usually make, covered in a thick layer of shredded cheese, sweet piquant peppers and fresh basil leaves to freshen the deal. Totally impressive yet wholly uncomplicated.

Why use Fire Roasted Tomatoes?
Fire roasted, charred tomatoes tend to be sweeter than other types of fresh, canned, or cooked tomatoes. When charred by the flame, it brings out the natural sugars in the fruit (yes tomatoes is a fruit and am sure many of you know that too) and contrasts them perfectly with the smoky flavour from the fire.
Roasting tomatoes brings out some of the greatest flavours, but actually makes them healthier for you. Tomatoes contain lycopene, a powerful antioxidant that reduces the risk of many types of cancer.
Roasted tomatoes are delicious, healthy and can be used in a plethora of ways.
For the Pizza Base
The pizza base is really easy to make. I followed the instructions on the back of the Eureka Mills Pizza Base packet.
The rest is easy.
I used the sweet piquant peppers which comes in a jar.
I had them on hand so I didn’t need to make my own.
Admittedly I don’t hesitate to sometimes use store-bought ingredients to make life easier especially when the pace of life quickens more than usual. I’m all about being flexible in the kitchen, cooking quick and easy meals and pleasing two tough food critics (my boys). Needless to say, they love it every time I make it.

SMOKY MARINARA SAUCE
Ingredients
- 5 large tomatoes
- Olive oil
- 1 onion (chopped)
- 4 cloves garlic (chopped)
- salt and pepper to taste
- 1/4 tsp smoked chili flakes
- 1/2 tsp smoked paprika
- 1 tsp Kashmiri chili powder
- 1 pkt tomato paste
- a few sweet piquant peppers
- fresh basil leaves
Instructions
- Over medium flame, roast your tomatoes until it becomes black and charred.
- Remove the blackened skin, and dice tomatoes in a blender
- You could also roast the tomatoes in the oven if your prefer
- Pour olive oil, season well and let the tomatoes (whole or sliced) roast for one hour. Then blend.
- Heat a clean medium saucepan over low heat.
- Sauté onion and garlic in some olive oil until garlic becomes fragrant.
- Add in the diced charred tomatoes.
- Add in your seasonings.
- Stir to combine and let it simmer until the tomatoes is cooked through and the oil rises to the top
- Add in the tomato paste and allow the marinara sauce to cook and thicken.
- Tear fresh basil leaves and pop into the sauce.
- Allow the sauce to cool before adding onto your pizza bases.
- Add your favourite toppings and plenty of cheese.
- Bake until the cheese is golden and bubbling.
