If I had to whittle my pantry staples down to the bare minimum, this entangled trio can withstand the harvest, that is, butter, mayonnaise and fresh pouring cream. When cooking with fewer ingredients, those that show up, need to pull their weight. The butter, mayonnaise and cream are the heroes of this creamy cajun chicken dish.
It’s perfect, easy, weeknight cooking. Supper is served with rotis or naan bread, which welcomes dipping or mopping up all of that delicious sauce or alternatively this is ideal for pastas too. Just toss in your favourite cooked pasta.
Roast chicken, Sunday roast gets a place in every household. This creamy cajun chicken is creamy, it’s saucy and tastes so good! If you’re craving a chicken dinner, this makes a lovely week night dinner too.
Many roast chickens are sometimes made with the skin on for that crispy bite. So you could leave the skin on if you wish, however I prefer it without the skin, especially since the dish is going to be all creamy and saucy and shiny with the butter and cream.
You could use either a whole chicken, pieces or breast fillets. The ingredients amounts may vary according to the amount or size of chicken you’re cooking.
This cajun chicken is so moist and juicy. This recipe is so versatile, once your chicken is marinated, you could roast it on the stove top, in the oven or in the air fryer. Cooking times may vary.

CREAMY CAJUN CHICKEN
Ingredients
- 4 chicken breast fillets
- 1 ½ tsp salt
- Freshly ground black pepper
- ¼ tsp turmeric
- 2 tsp Kashmiri chili powder
- 1 tbsp cajun spice
- 1 tsp garam masala
- 1 tsp ginger garlic paste
- 1 tsp garlic powder
- Oil
- 2 tbs butter
- 2 tbs mayonnaise
- ¾ cup fresh cream
- Freshly chopped coriander
Instructions
- Wash & slit chicken. Marinate chicken with the first 6 ingredients for one hour.
- Place marinated chicken into a pot with oil and fry on both sides until crisp and tender.
- When the chicken is cooked, add in the butter,mayonnaise and fresh cream.
- Garnish with chopped coriander.
- Serve with rotis or naan bread.
