This Apple and Almond Cake is quick, easy and simply perfect for afternoon tea. It’s made with applesauce, almond flour, cinnamon and chopped walnuts creating a delicious balance of flavours and textures.
A store-bought applesauce is good to go, however try to pick one that is made without added-sugar or low in sugar. I used a smooth applesauce although a slightly chunky one will work too.
You can use plain all purpose flour or self raising flour. Both works well in this recipe. If using self raising flour, there will be no need to add baking powder.
I added cinnamon for flavour. You could also add some ground ginger, a touch of nutmeg or pumpkin spice. It’s great for Fall and Winter tea moments.
To finish off the cake, I added a nutty crumble topping for extra crunch and texture.
Preheat your oven on 180 degree Celsius.
Prepare a 24 cm baking dish.
Line the bottom of the cake pan with baking paper or parchment paper and lightly grease the sides with soft butter or oil from a cooking spray.
Apple & Almond Cake
Ingredients
- 2 Eggs at room temperature
- 1/3 cup brown sugar
- 1/2 cup unsalted butter - melted
- 1 cup applesauce - preferably unsweetened
- 1/2 cup plain or all-purpose flour
- 1/2 cup almond flour
- 1 1/2 teaspoon Baking Powder
- 1/2 teaspoon Ground Cinnamon
- 1/2 tsp salt
- Icing sugar for dusting
- Crumble Topping
- 1/2 cup melted butter
- 3/4 cup plain flour
- 4 tbs brown sugar
- 1/2 tsp cinnamon
- Pinch salt
- 1/2 cup almonds or chopped walnuts for topping
- 2 tbs honey
Instructions
- Crumble Topping:
- In a medium bowl, whisk together the melted butter, sugars, cinnamon, salt and flour. Add the nuts and honey and combine until the mixtures creates crumbs. Set aside.
- The Cake
- Preheat your oven on 180'C
- Line the bottom of a 24 cm baking dish and lightly grease the sides.
- Melt the butter in the microwave and set aside to cool down.
- In a large mixing bowl add the melted butter, sugar, applesauce, eggs, cinnamon, salt, baking powder, almond flour and lastly plain flour. Combine mixture after the addition of each ingredient and whisk until combined. Once combined, stop whisking.
- Pour mixture into the prepared baking dish and spread the mixture around.
- Lastly top with crumble topping.
- Bake for 30 to 35 minutes or until a skewer comes out clean. Leave to cool down completely before removing from the pan and serving.
- Dust with icing sugar (optional)
