Melting Moments biscuits or cookies are the most popular cookies on every festive or celebratory occasion. I make it for every Diwali and for any special occasion where tea is being served. It’s definitely one of the most chosen cookie. If it is luxuriously decorated with chocolate and nuts, it’s the first I’d choose.
I love to pack it in small boxes as a present or as a Diwali box to family and friends.
These melting moments consists of only five simple ingredients. It melts in the mouth, full of buttery flavour, crumbly and totally addictive.

Ensure to measure the ingredients before you get started.
The flavour of the cookies depends mostly on the quality of the butter. I am currently using the Gay Lea brand butter from Canada, which yields an excellent result. Back home I loved the flavours of Lurpak and Kerrygold.
Avoid substituting the butter wholly or partially with margarine.
Butter can be salted or unsalted. Cut the butter into small cubes.
I use sifted icing sugar to make the melting moments. I have used castor sugar before however I prefer the smoothness and consistency of the dough using icing sugar.
The recipe calls for two types of flour, cake/pastry flour and cornflour.
The cornflour makes the melting moments so soft and light. Avoid adding extra cornflour, otherwise the cookies will shatter easily and be difficult to handle.
If you’re using salted butter, you can omit any additional salt to the dough.
The dough comes together quickly. You can use a mixer or food processor or simply work with your hands if you prefer the old way of doing baking.
Preheat the oven to 180 degrees celcius, both top and bottom heat.
Layer a piece of baking paper to your baking tray.
Spray a little non stick spray onto the baking paper.
Use a small amount of the cookie dough preferably a tablespoon full to form small balls with your hands. Try to keep all the cookies the same size.
You can also weigh each piece to about 15g each. Place the balls separated from each other onto the baking paper. Press it down carefully with the tines of a fork to form a pattern.
If you opt for another method, you can also pipe it onto the baking paper using a piping bag and nozzle to create different patterns.

Ingredients
- 500g butter
- 1 cup icing sugar
- 1 cup cornflour
- 3 cups cake flour (as needed to make a soft depending on climate)
- 1 tsp fine salt
Instructions
- Place all the ingredients in a mixer or blender. Add the butter first, followed by icing sugar, and cornstarch and salt.
- Lastly, add the cake flour on top. At this point, I remove the mixture into another bowl and slowly add the cake flour to reach the desired consistency of the dough.
- If you prefer using the mixer or food processor, follow the next step.
- Mix until the ingredients are well combined and clear from the side of the mixing bowl.
- Place small balls or pipe cookies onto baking paper on baking tray.
- Bake at 180 degrees celcius for 12-15 minutes.
- Once baked, leave to cool completely before decorating with melted chocolate and/nuts.
