BLUEBERRIES & HONEY GRANOLA CRUNCH

Ingredients
  

  • OVERNIGHT OATS
  • ½ cup greek yogurt
  • ½ cup steel cut oats or rolled oats
  • 2 tbsp honey
  • 2 tsp chia seeds
  • ¼ cup milk
  • ¼ cup granola crunch @Futurelife
  • fresh fruit of choice
  • Berry compote (optional)
  • BERRY COMPOTE
  • 1/2 cup water
  • 1/4 cup sugar
  • drop of vanilla essence
  • 1 cup frozen fruit (thawed) (blueberries or raspberries or mixed berries)

Instructions
 

  • OVERNIGHT OATS
  • Add the greek yogurt and milk to a bowl and mix.
  • Add the oats, honey, and chia seeds and combine.
  • Put the bowl in the fridge with foil wrap over it (or store in an airtight container).
  • Leave for 4+ hours, preferably overnight.
  • Serve with your favourite fruit, berry compote,and granola for that extra crunch and texture.
  • BERRY COMPOTE
  • Heat water and sugar in a clean saucepan over medium to low heat.
  • Stir the water and sugar until the sugar dissolves.
  • Add in the fruit and allow to simmer until it becomes thick and bubbly.
  • Using a handheld blender, blend to form a smooth consistency.
  • Layer or stir through the overnight oats.
