Melt butter in a clean saucepan over a bowl of simmering water
Add the golden syrup
Break half of the chocolate pieces into the butter mixture. Stir and allow it to melt slowly.
Another great way to melt the chocolate is do so in the microwave stirring after every 15 seconds.
Continue to melt the chocolate as required for the alternate layers and melt the different flavours separately.
Layer a little melted chocolate onto the base of a baking dish lined with grease proof paper.
Allow the grease proof paper ends to stick out a bit, to enable ease when removing the hardened rocky road from the baking dish.
Add in your marshmallows, speckled eggs and peanuts, creating a layer between each filling.
Pour melted chocolate over and repeat until you’ve used up all the ingredients.
Allow the rocky road to set in the fridge for an hour or two.
Remove the grease proof paper handles and place the rocky road onto a chopping board.
Cut it up into squares, diamonds, slabs etc and indulge!
Store leftovers in an airtight container in the fridge.
