SESAME SEED CHICKEN TOAST

Ingredients
  

  • 2 chicken fillets (cubed)
  • 2 spring onion stems (chopped)
  • 1 small red onion (chopped or sliced)
  • 3 green chillies
  • handful of coriander
  • fresh mint
  • Salt & freshly ground pepper (to taste)
  • 1 tsp ginger garlic paste
  • 1 tbs soy sauce
  • 1 egg
  • White bread slices
  • Sesame seeds
  • Oil (frying)
  • Chili sauce (dipping)

Instructions
 

  • Clean chicken breast fillets and cut up into cubes for ease of dicing.
  • Add in all of the above ingredients up until the egg into a food processor with a chopping blade attached.
  • Blitz the chicken and turn the diced chicken mixture out into a bowl.
  • Spread a thin layer of the chicken mixture onto a slice of bread.
  • Coat the chicken side with sesame seeds.
  • Cut the bread into triangles (x4)
  • Fry in medium hot oil until golden and crisp
  • Serve with your favourite chili sauce.
  • Best served warm
