CAJUN CHICKEN ON CHILI OIL NOODLES

Ingredients
  

  • Chargrilled Cajun Chicken
  • 2 chicken fillets
  • Salt & freshly ground black pepper to taste
  • 1 tsp Kashmiri chili powder
  • 2 tsp Cajun rub seasonings
  • 1 tsp ginger garlic paste
  • 2 tbs olive oil
  • Chilli Oil Noodles
  • 3 tbs red chili flakes
  • 1 tbs cayenne pepper
  • 1 tbs freshly ground black pepper
  • 1/2 tsp salt
  • 3 tbs soy sauce
  • 3 tbs brown vinegar
  • 2 tsp garlic (diced)
  • 2 spring onions (cut)
  • 1/2 cup vegetable oil
  • 1 pkt ramen noodles (cooked according to pkt instructions)

Instructions
 

  • Chargrilled Cajun Chicken
  • Place the chicken fillets into a heat proof dish and preheat the Instant Pot Vortex Air Fryer.
  • Once it’s ready for the food, place your dish with the chicken into the basket.
  • Set the timer for 18 minutes @ 200 degrees celcius
  • Turn halfway through cooking time.
  • Chili Oil Noodles
  • Add the first eight ingredients to a clean saucepan.
  • Heat the oil in a clean pan until it’s very hot.
  • Pour the hot oil into the spice saucepan.
  • Be careful not to burn.
  • Toss in the cooked noodles.
  • Reserve some chili oil to garnish the final dish.
  • Slice your chicken fillet and place onto a bed of chili oil noodles.
  • Garnish with the reserved chili oil.
  • Serve immediately.
