Whip 1 cup of cream and the vanilla essence.
For the ganache, heat remaining 1/2 cup cream in the microwave for one minute, add dark chocolate and stir to combine.
Dip the rims of the glasses into the ganache – allow it to drizzle into the sides of the glasses. Leave to set.
Crush the biscuits to form a biscuit crumble.
Spoon some ganache into the base of each glass, then layer with crushed biscuits followed by whipped cream. Top with crushed biscuits, followed by some more ganache.
To finish, top with whipped cream, shaves of mint chocolate and a drizzle of ganache. Drizzle over some caramel sauce.
Chill in the fridge or serve immediately.
