Ingredients
1 can chickpeas (rinsed & drained)
Zest & juice of 2 lemons (about 4 tablespoons)
1 small onion (diced)
2 cloves garlic (minced)
1/4 tsp cumin seeds
Freshly ground pepper to taste
Salt to taste
1 tbsp olive oil
1/2 tsp paprika
Freshly chopped coriander
Instructions
In a small saucepan over medium heat, heat oil and fry onions, cumin seeds and garlic until soft and translucent.
Add in the chickpeas, salt, pepper, paprika, lemon juice and zest. Let simmer until chickpeas are tender and crisp.
