LEMONY CORIANDER CHICKPEAS & TAHINI

Ingredients
  

  • 1 can chickpeas (rinsed & drained)
  • Zest & juice of 2 lemons (about 4 tablespoons)
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1/4 tsp cumin seeds
  • Freshly ground pepper to taste
  • Salt to taste
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • Freshly chopped coriander

Instructions
 

  • In a small saucepan over medium heat, heat oil and fry onions, cumin seeds and garlic until soft and translucent.
  • Add in the chickpeas, salt, pepper, paprika, lemon juice and zest. Let simmer until chickpeas are tender and crisp.
