This pudding is a love letter to my hubby, and it is my summer pudding to End All Other Summer Puddings. It is intensely rich, equal parts vanilla-flecked, butterscotch kissed pudding, chunky sliced bananas which is luxuriously layered and topped off with a shower of buttery vanilla biscuit crumble. Just five ingredients and ten minutes is all you really need. Having this dessert, is definitely going to make your days more sterling than the days without it. It doesn’t do anything halfway and neither should we. My hubby submits to a lazy, cosy indulgence. No matter how you do it, you’re going to win.
Instant Pudding
It might sound lame using instant pudding however let me remind you how busy we get these days and yet we still need to provide, when we have hungry boys scowling the kitchen. This is an easy, fail proof method and it couldn’t be any tastier. I always use a good quality instant pudding, preferably and easily obtainable, the Moir’s brand. Believe me, you won’t go wrong, and you will love it.
Why Condensed Milk and Dessert Cream?
Both the condensed milk and the dessert cream is highly recommended and so needed to create that creamy fluff you’re looking for, for that silky fanciful floaty-in-the-mouth taste and feeling. So, my thoughts are, if you’ve come this far, you might as well go in all the way! 😀
I always use the Nestle brand products.
Butter Vanilla Biscuits
Once again, a good quality butter vanilla biscuit is suggested for that deluxe taste. I highly recommend purchasing these from Woolworths and yes you will need 2 packets of it. Trust me, you’re not going to regret it. As mentioned above, this pudding doesn’t do anything halfway and neither should we!
Fresh Bananas
Using too ripe or over ripe bananas is only going to mess up the pudding. You will need fresh perfect yellow bananas. Once sliced, drizzle a lemon juice over it, to prevent it from turning brown. A little tang on the bananas does add to the flavours.
Let’s not forget that I kept the Magnolias Bakery Banana Pudding in mind when recreating my very own version. So, let’s get started.
BUTTERSCOTCH BANANA PUDDING


BUTTERSCOTCH BANANA PUDDING
Ingredients
- 2 boxes instant pudding (butterscotch flavour)
- 600 ml fresh milk
- 1 can Nestle condensed milk.
- 2 can Nestle dessert cream.
- 2 cups freshly sliced bananas
- 2 pkts butter vanilla biscuits
Instructions
- Using a handheld machine, whip pudding mix with fresh milk.
- Once blended, pour in the sweetened condensed milk
- Continue to beat until the mixture loosens a bit and starts to cream up
- Lastly add the dessert cream into the pudding mix.
- Once again, beat softly to blend the cream into pudding mixture until it becomes thick, creamy, and fluffy
- In a Pyrex rectangular dish, layer the butter vanilla biscuits to fill the base.
- Then place a layer of sliced bananas on top of the biscuits.
- Now ladle scoopfuls of the delicious butterscotch mixture over the bananas
- Continue the layering process and end with the butterscotch mixture
- Top off with a generous sprinkle of crumbled biscuits.
- Store in the fridge for four hours minimum
- Serve scoopfuls into individual glasses or dessert bowls
- You’ll definitely enjoy this one!
