Strawberry Scones🍓
An oldie but a goodie. They’re the best! Not too sweet, tender-centred, crisped edges, perfect crumb, studded with strawberry pieces. All dressed up with a vanilla mascarpone glaze. I like them warm with a dab of butter. What is vividly clear, is that this homely comforts triumphed at my tea table this afternoon. Quite a charmer, summoning pantry staples. Hopefully this will become your new family favourite.

STRAWBERRY SCONES
Ingredients
- 3 cups cake wheat flour
- 2 tsp baking powder
- ¾ cup icing sugar
- ¼ tsp salt
- 130 g butter
- 1 cup strawberries ( chopped)
- 1½ cups buttermilk yoghurt
- 2 tbsp milk
- Vanilla Glaze
- ½ tub Mascarpone
- ½ cup milk
- ⅓ cup icing sugar
- 1 tsp vanilla essence
Instructions
- Sift dry ingredients into a large bowl.
- Mix in the butter to form crumbs.
- Add in the strawberries.
- Mix to combine. .
- Pour in the buttermilk to form a soft, yet sticky dough.
- Shape into a disk, slice into triangles. Brush tops with milk.
- Space them apart onto a greased baking pan and bake in a preheated oven at 180 degree celcius for 16- 20 minutes until golden brown.
- Whisk the vanilla glaze ingredients into a silky smooth, pourable glaze.
- Spoon vanilla glaze over, once the scones have cooled slightly.
- Serve warm
