BANANA BREAD

HAPPINESS IS THE SMELL OF FRESHLY BAKED BANANA BREAD

This delightful bread with a glossy, bronzed exterior, swirled with walnuts, perfectly crumbed, is impossibly delicious with ribbons of sweetened cream cheese frosting drizzled with more walnuts for that extra crunch. If you’re not a sweet tooth, it tastes just as great with a swift coat of butter.

I love baking loaves. I find the flavours to be more intense. It is an uncluttered one bowl mix, it’s quicker and definitely a lot less fuss. You could easily skip the toppings, keep it simple and still enjoy a chunky slice with your tea. It’s that good!

Using ripe bananas is ideal. If you’ve just bought bananas and it’s still very yellow or a bit green, yet you crave banana bread like me and can’t wait a day or two for the bananas to ripen, then here’s a quick trick!
Simply place the bananas onto a baking sheet and let them bake at 150 degree celcius for 40-45 minutes. Don’t bother flipping them halfway through.
Once cooled, you’re good to go.

BANANA BREAD

Cook Time 35 mins

Ingredients
  

  • 3 large ripe bananas
  • 3 tsp oil
  • ¾ cup brown sugar
  • 3 tbsp butter
  • 2 eggs
  • 1 tsp vanilla essence
  • ½ cup milk
  • ½ tsp bicarb
  • 2 cups cake wheat flour
  • tsp baking powder
  • ½ cup chopped walnuts

Instructions
 

  • Smash bananas and oil together
  • Keep aside
  • Beat butter and sugar together.
  • Drop in the eggs
  • Whisk together
  • Add in the mashed bananas, flour and baking powder.
  • Mix the milk and bicarb together and pour into the bowl
  • Mix well
  • Gently stir in the walnuts
  • Pour mixture into a grease loaf pan
  • Bake at 180 degree celcius for 35 minutes
  • Once cooked, leave to cool before slicing or topping with cream cheese frosting.
