SAUCY LEMON-Y CHICKEN

After all that sweetness, I craved something a little more spicy and tangy. Here’s to a simple yet comforting saucy chicken with a creamy lemon-y sauce. All it needs is a simple green salad and crusty sourdough bread to mop up that satiny sauce.

Let’s talk about chicken. It’s probably the most-cooked protein in my home. There are so many different ways to cook chicken, inspired by cuisines from around the world.

Transport yourself to the pool side indulging in this easy lemon-y chicken recipe.

This easy and quick chicken dish comes together with only a handful of ingredients and you can turn it up a notch with added spices if you like it a little more spicier.

Can I use any other chicken pieces?
Yes absolutely!
This lemon chicken will work with chicken breast, chicken thighs, wings or drumsticks.
Prepare the recipe according to the instructions, the only difference will be in the cooking time. The cook time will depend on the size of the thighs.

You may add any vegetables to complete the dish.
My family enjoyed it with a green salad and crusty bread.
The easy chicken dish is completely ready in just 30 minutes and can be served with mashed potatoes or your favourite pasta.

If you don’t want to fry the chicken, try cooking it in the air fryer.

SAUCY LEMON-Y CHICKEN

Prep Time 10 mins
Cook Time 20 mins
Servings 2 people

Ingredients
  

  • 2 large chicken breast (patted dry with paper towels)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • salt & pepper to taste
  • 1 tsp Kashmiri chili powder
  • ½ tsp garam masala
  • ½ tsp ground cumin
  • 1 tsp ginger garlic paste
  • coriander leaves (to garnish)
  • ½ lemon, sliced (for garnish)
  • Ingredients for Lemon Butter Sauce:
  • 3 tbsp butter
  • 2 garlic cloves (minced
  • 4 tbsp lemon juice
  • 2 tbsp chili sauce (optional)
  • 3 tbsp fresh cream
  • 2 tbsp mayonnaise
  • 1 tsp ground black pepper

Instructions
 

  • Cut the chicken breasts in cubed pieces.
  • Marinate chicken with spices & ginger garlic paste.
  • In a large skillet, heat oil and butter. Add in the chicken and cook 4-5 minutes per side, or until cooked through.
  • Reduce the heat if chicken browns too quickly.
  • Meanwhile, in a separate saucepan, melt butter and garlic, cook until fragrant
  • Add the lemon juice and pepper. Stir it and then add in the chili sauce and mayonnaise
  • Allow the sauce to cook for about 2 minutes.
  • Turn off the heat and add in the fresh cream
  • Mix together
  • Pour the sauce over the cooked chicken, turning to coat.
  • Garnish with lemon slices and freshly chopped coriander if desired.
