BLUEBERRIES & HONEY GRANOLA CRUNCH

My boys are totally fussy when it comes to breakfast. Sometimes a bowl of cereal just won’t cut it. However we still need those essential nutrients to kick start our day.

Aside from being incredibly delicious, granola crunch is high in protein, energy and dietary fibre plus probiotics. These wholesome clusters are made with rolled oats and crispy puffed rice. All of our favourites in one pack. They are perfect for easy breakfasts or snacks on the go if your mornings are fast paced.

Overnight oats, chia puddings topped with granola crunch plus Greek yoghurt have become our family’s perfect breakfast staple. Apart from the colourful addition of fresh fruits, it yields a sweet and tart flavour and just makes the whole breakfast thing a great deal more appealing and so glorious.

These honey overnight oats are creamy, totally delicious, and perfectly sweet to make for a comforting breakfast recipe.

Overnight oats are such a phenomenal way to have a quick grab-and-go breakfast, and this honey overnight oats recipe is the ideal option when you want easy, simple, but appetizing choices.

The ingredients are not complicated at all and you can make them plain or add some chia seeds if you want to kick it up a notch. I love adding chia seeds for that extra burst of flavour and yumminess.

No heating is involved in overnight oats, just a few hours or a night spent in the fridge.

You still add milk and/or yogurt because the oats soak up the liquids overnight to get to the point where they are creamy and so delicious!

You’re left with a decadent and really refreshing flavourful breakfast, to which you can also add fruit or other mix-ins too, and overnight oats are a perfect option for, in the summer when you don’t feel like warm oatmeal.

You could use plant based milk or dairy. For mine, I used soya milk and Greek yoghurt. If you’ve been following me for a while now, you’d come to know that I’m not a fan of dairy milk. My only weakness is cheese.

You could store your overnight oats in a sealable glass jar or in a mug closed with foil or cling wrap. A bowl works fine too.

Ingredients
  

  • OVERNIGHT OATS
  • ½ cup greek yogurt
  • ½ cup steel cut oats or rolled oats
  • 2 tbsp honey
  • 2 tsp chia seeds
  • ¼ cup milk
  • ¼ cup granola crunch @Futurelife
  • fresh fruit of choice
  • Berry compote (optional)
  • BERRY COMPOTE
  • 1/2 cup water
  • 1/4 cup sugar
  • drop of vanilla essence
  • 1 cup frozen fruit (thawed) (blueberries or raspberries or mixed berries)

Instructions
 

  • OVERNIGHT OATS
  • Add the greek yogurt and milk to a bowl and mix.
  • Add the oats, honey, and chia seeds and combine.
  • Put the bowl in the fridge with foil wrap over it (or store in an airtight container).
  • Leave for 4+ hours, preferably overnight.
  • Serve with your favourite fruit, berry compote,and granola for that extra crunch and texture.
  • BERRY COMPOTE
  • Heat water and sugar in a clean saucepan over medium to low heat.
  • Stir the water and sugar until the sugar dissolves.
  • Add in the fruit and allow to simmer until it becomes thick and bubbly.
  • Using a handheld blender, blend to form a smooth consistency.
  • Layer or stir through the overnight oats.
