I made this garlic cheese bread earlier in the month. It rained a lot that week. My friend passed on. We shared so much. My heart hurt for her suffering at the last days of her life. All I could think about, was everything we had shared, how we laughed, cried and gossiped together, about everything that irritated us, the traffic, the weather, our weight, our clothes etc.
I made this garlic cheese bread to comfort my mind, ease my soul and soothe my spiritual wound. It did good. If you’re a garlic fanatic, you’ll appreciate the fragrant perfume of garlic baking in the oven. It’s glorious.
However it took me a while to write this and share this reel. I think I’ve finally come to understand that she is, where she is meant to be. Resting softly in heaven!

The easiest recipe commonly known, is basically with soft butter, chopped garlic, and bread. My recipe takes that basic principle and kicks it up several notches.

WHAT KIND OF BREAD IS BEST FOR GARLIC BREAD?
The best kinds of bread are soft on the inside with a crusty exterior. My favourite for this is the Ciabatta bread from Woolworths. A thick loaf of french bread or a hearty Italian loaf will yield good results too. In a quick moment, even sliced sandwich bread will work.
This recipe comes with a warning. They are so Gooood and Soooo addictive. You won’t be able to put these down at all. They are perfectly chewy and so flavourful.
GARLIC CHEESE BREAD
Ingredients
- 1 loaf Ciabatta or french bread (5 thick slices)
- Olive oil
- 4-5 knobs of garlic (peels removed)
- Sprig of rosemary
- Sprigs of thyme
- 1 cup fresh grated Mozzarella or Gouda cheese
- ½ cup cream cheese
- Salt & pepper to taste
Instructions
- Clean garlic cloves and add to a greased baking dish.
- Pour in enough olive oil to cover the garlic.
- Add in the fresh herbs.
- Bake at 180 degrees celcius for 45-60 minutes until the garlic has turned golden brown.
- Remove from oven and keep aside
- Slice thick slices of bread and toast in the oven, air fryer or toaster.
- Spread the garlic oil and smudge the garlic cloves onto the toasted bread
- Smear cream cheese thickly onto the bread. I used the jalapeño flavoured cream cheese.
- Pile as much shredded cheese on the bread as desired
- Bake the bread once again until the cheese is melty and gooey.
- Add more smudged garlic cloves.
- Drizzle freshly ground black pepper and freshly torn thyme.
- Serve immediately!
- Store leftover garlic and oil in a glass jar in the fridge.
- Use for pastas, pizzas etc
