TANDOORI CHICKEN BURGERS

These delicious and juicy burgers are cooked in a loaf pan in the oven!
Packed full of flavour, they are so easy to make and the ideal food for a lazy midweek meal.

It’s perfect when you have other chores or errands lined up and everyone is hungry. More so, when they’re all looking at you for food. Know that feeling?

So here is my convenient and tasty tandoori chicken burger. So easy and damn good!
Whenever I make tandoori chicken burgers, my kitchen smells deliciously fragrant and my boys are ridiculously happy.
I’m able to get on with other tasks or simply laze up in front of the tv whilst the chicken cooks in the oven.

The tandoori chicken, once sliced, can be used in burgers, pastas and as a topping for pizzas.
It’s fantastic!

The types of bread buns you use, is based on your family’s favourite. We usually do a variety of white and brown seeded bread buns.

The salads I use, is usually lettuce leaves and red onion slices. My boys do not like tomatoes or cucumber slices in their burgers. Once again if that’s something your family loves, then add that to your burger.

The sauce I make for these juicy burgers is the easiest you’ll ever get.
I use equal amounts of mayonnaise and chili sauce.
My current favourite is the Chicken Licken sauce!

Here goes my recipe for the tandoori chicken.

TANDOORI CHICKEN BURGERS

Cook Time 1 hr
Servings 6 Burgers

Ingredients
  

  • 6 chicken breast fillets
  • 2 tsp salt
  • black pepper to taste
  • ½ tsp turmeric
  • 2 tsp Kashmiri chili powder
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 2 tsp oregano
  • 1 tsp chili flakes
  • 1 tsp Moroccan rub (optional)
  • tsp ginger garlic paste
  • 2 tbsp lemon juice
  • 4 tbsp heaped Greek yoghurt
  • 2 tbsp olive oil

Instructions
 

  • Marinate the chicken fillets with the above ingredients.
  • Leave the chicken to rest in the fridge for 1 hour.
  • Grease a loaf pan and pack your chicken fillets tightly into the pan.
  • Bake at 200 degree celcius for 1 hour.
  • Once cooked, remove from the oven and leave the chicken to rest for 10 minutes before overturning it onto a wooden board and slicing.
