I’m obsessed with speckled eggs! It’s nearly Easter, and I couldn’t resist. For all those in between times, when your sweet tooth needs appeasing, I’m here to deliver on blissful expectation.

It is definitely not on the healthy side, so be still those beating hearts and let your indulgence swoon you this Easter with this 6 ingredient rocky road

It’s soon to be Easter and I think it’s safe to say that we’ve all been chocolate-ting up with unbridled enthusiasm in an effort to try our hand at something deliciously chocolate!

The rocky road uses a minimal ingredient list (yet plenty of some), delivering a bite that is decadent, yet chewy and gooey ending with a salted chocolate nutty crumble on the tongue. So good!

So what exactly is rocky road? Simply stated, it’s a sweet (and salty) snack that’s packed full of textured pieces and bound together with chocolate. Originating in Australia, as a way to sell spoiled confectionery like nuts and disguising them with the chocolate flavour. Now it’s a treat loved all across the world and it typically contains biscuit pieces, nuts, pretzels pieces, marshmallows, shredded coconut, soft gums and the list can go on because the nicest thing about rocky road is that you don’t have to play by the rules. The choice is your completely. Rocky road is definitely a thing of beauty. No two slabs are the same!

SPECKLED EGGS ROCKY ROAD

Prep Time 20 mins
Set Time 1 hr

Ingredients
  

  • 1 Kg Cadbury chocolate (I used a few different slabs, whole nut, cashew & coconut and plain)
  • 500 g coconut marshmallows (chopped)
  • 300 g giant multi coloured speckled eggs (chopped in half)
  • 150 g multi coloured speckled eggs (chopped in half)
  • 50 g multi coloured spekled eggs (to decorate the top)
  • 300 g salted peanuts
  • 50 g butter
  • 2 tbs golden syrup

Instructions
 

  • Melt butter in a clean saucepan over a bowl of simmering water
  • Add the golden syrup
  • Break half of the chocolate pieces into the butter mixture. Stir and allow it to melt slowly.
  • Another great way to melt the chocolate is do so in the microwave stirring after every 15 seconds.
  • Continue to melt the chocolate as required for the alternate layers and melt the different flavours separately.
  • Layer a little melted chocolate onto the base of a baking dish lined with grease proof paper.
  • Allow the grease proof paper ends to stick out a bit, to enable ease when removing the hardened rocky road from the baking dish.
  • Add in your marshmallows, speckled eggs and peanuts, creating a layer between each filling.
  • Pour melted chocolate over and repeat until you’ve used up all the ingredients.
  • Allow the rocky road to set in the fridge for an hour or two.
  • Remove the grease proof paper handles and place the rocky road onto a chopping board.
  • Cut it up into squares, diamonds, slabs etc and indulge!
  • Store leftovers in an airtight container in the fridge.
