To speed up the cooking time, I grilled the chicken fillet in the air fryer. @instantpot_sa
If you are not into air frying your chicken or prefer the conventional method, you could either pan fry it on the stove like I did with the Cajun Chicken Pasta otherwise it can also be grilled in the oven.
Times may vary accordingly.
The chicken fillets are marinated with pantry staple spices and a store-bought cajun rub mix. The flavourful combination of olive oil, spice plus the cajun seasonings, making the chicken breast succulent with a bright fiery taste.
You can easily adjust the amount of spice according to your preference. Do not forget to let the chicken rest for 5 minutes before slicing, as this keeps the chicken breast moist and tender.
Homemade spicy chili oil with spring onions and garlic, all tossed with cooked ramen noodles has got to be the most comforting meal on this cold rainy day! The oil is not just spicy, it’s flavourful too.

CAJUN CHICKEN ON CHILI OIL NOODLES
Ingredients
- Chargrilled Cajun Chicken
- 2 chicken fillets
- Salt & freshly ground black pepper to taste
- 1 tsp Kashmiri chili powder
- 2 tsp Cajun rub seasonings
- 1 tsp ginger garlic paste
- 2 tbs olive oil
- Chilli Oil Noodles
- 3 tbs red chili flakes
- 1 tbs cayenne pepper
- 1 tbs freshly ground black pepper
- 1/2 tsp salt
- 3 tbs soy sauce
- 3 tbs brown vinegar
- 2 tsp garlic (diced)
- 2 spring onions (cut)
- 1/2 cup vegetable oil
- 1 pkt ramen noodles (cooked according to pkt instructions)
Instructions
- Chargrilled Cajun Chicken
- Place the chicken fillets into a heat proof dish and preheat the Instant Pot Vortex Air Fryer.
- Once it’s ready for the food, place your dish with the chicken into the basket.
- Set the timer for 18 minutes @ 200 degrees celcius
- Turn halfway through cooking time.
- Chili Oil Noodles
- Add the first eight ingredients to a clean saucepan.
- Heat the oil in a clean pan until it’s very hot.
- Pour the hot oil into the spice saucepan.
- Be careful not to burn.
- Toss in the cooked noodles.
- Reserve some chili oil to garnish the final dish.
- Slice your chicken fillet and place onto a bed of chili oil noodles.
- Garnish with the reserved chili oil.
- Serve immediately.
