Cinnamon Sugar Donut Bread

The scent of cinnamon is spicy, sweet, and for most of us, it’s filled with happy nostalgic memories of delicious food, comforting treats and cozy days. The aroma is warm, somewhat fruity and almost vanilla-like.

I love everything cinnamon. My first obsession began with pancakes, rolled in cinnamon sugar. Then donuts, dunked in cinnamon sugar. With a myriad of other different flavours being offered, I would always opt for the cinnamon sugar ones. It’s a simple way to make every bite special. It’s truly irresistible when served with your favourite cuppa.

This cinnamon bread is so close to eating a cinnamon sugar donut from the bakery.

You get that wonderful fresh bakery aroma whiff as you bake this sweet bread in your oven.

Usually to bake a sweet bread generally involves yeast and some time to allow the dough to rise.

My recipe is simple, easy and so flavourful. It is ideal for those days when you want a lovely tea treat as quick as the upcoming tea time.

The bread will rise beautifully and will completely taste like a cake donut. Soft, fluffy, melt-in-the-mouth moments.

Why Molasses?

Molasses is usually used to sweeten and flavour foods. It is a major constituent of fine commercial brown sugar. The flavour of molasses reminds me of gingerbread cookies. That’s because molasses give gingerbread its characteristic colour and flavour.

So, if you tasted molasses off a spoon, though, you’d detect sweet burnt caramel notes, a hint of smoke and a prune-like aftertaste.

I find that the flavour of molasses and the taste of cinnamon makes an epic combo in this delightfully sweet donut bread.

Perfect for the upcoming Christmas holidays as we loom into colder snowy days.

No Buttermilk?

You can make a homemade version of buttermilk, by adding ½ tsp of white vinegar to ½ cup of full cream milk. Stir it well and let it sit for a few minutes to thicken.

I’ve adapted this method since cultured milk is not sold here like back home, which used to be my favourite addition when seeking substitutes for yoghurt or buttermilk.

Cinnamon Sugar Donut Bread

Cook Time 40 mins
Servings 9 people

Ingredients
  

  • 1 cup Castor sugar
  • 1 tsp Vanilla essence
  • 2  large Eggs (roomtemperature)
  • ¼ cup Oil (Vegetable)
  • ¼ cup Butter (softened)
  • 1 ½ cups All Purpose Flour
  • 1 tsp Baking powder
  • ½ tsp Salt
  • 1 tsp Cinnamon
  • 1 tbs Molasses
  • ½ cup Buttermilk
  • Coat:
  • ½ cup Butter (melted)
  • 1 tbs Cinnamon
  • 2 tbs Castor sugar or brown sugar

Instructions
 

  • Preheat the oven to 180-degree celcius
  • Spray the loaf pan with a non-stick spray and keep asideuntil needed.
  • In a large mixing bowl, combine the butter, oil andsugar. Beat well until combined and fluffy.
  • Add in the eggs and vanilla, and beat until smooth andglossy for about two minutes.
  • Sift in the dry ingredients and add in the buttermilk oryoghurt.
  • Scrape the sides of the bowl to incorporate allingredients together.
  • Add in the molasses and mix until well combined.
  • Pour the batter into the baking pan and bake for 40 to 45minutes or until the bread is cooked through.
  • Remove from the oven and set aside to cool for about 10 minutes
  • Whilst still warm, gently loosen the loaf from the sides of the loaf pan
  • Brush the donut bread with melted butter and dust with generously with cinnamon sugar.
  • Sprinkle all sides of the bread with the cinnamon sugar blend.
  • Serve with your favourite cuppa.

Notes

Notes:
The bread should be stored in an airtight container, or into a ziploc bag to keep it fresh for longer.
If it is left on the counter, it will stay fresh for up to 4 days, however if it is placed into the refrigerator, the bread should last between 5 to 6 days.
